ABV 4.3% A classic Irish Ale that has a fresh malty nose with an entertainingly creamy but slightly bitter, coffee, raisin, and plum palate.

This is a classic Irish Stout. Full bodied yet soft and spectacular in appearance. This stout has a smooth roasted flavor and is very well-balanced.

In a large brew kettle, heat 3 gallons of filtered water to 165°F (74°C). Add the crushed malts: Pale Malt, Roasted Barley, Crystal Malt, and Chocolate Malt. Stir to combine and maintain the temperature for 60 minutes.

Prepare the Mash

After mashing, heat an additional 2 gallons of water to 170°F (77°C). Sparge the mash by slowly pouring the hot water over the grains to extract the sugars. Collect the liquid (wort) in the brew kettle.

Bring the collected wort to a boil. Once boiling, add the East Kent Goldings Hops. Boil for 60 minutes.

With 15 minutes remaining in the boil, add the Fuggle Hops to the kettle.

After the boil, cool the wort quickly using a wort chiller or an ice bath. Once cooled to around 70°F (21°C), transfer the wort to a sanitized fermentation vessel.

Cool and Transfer

Sprinkle the Irish Ale Yeast over the cooled wort and stir gently to mix. Seal the fermentation vessel with an airlock.

Pitch the Yeast

Allow the stout to ferment in a cool, dark place for 1-2 weeks until fermentation activity has ceased.

Ferment

If bottling, dissolve the priming sugar in 2 cups of water and boil for 5 minutes. Cool and add to the bottling bucket.

Prepare Bottles

Transfer the stout from the fermentation vessel to the bottling bucket, mixing gently with the priming sugar solution. Fill sanitized bottles and cap them.

Bottle the Stout

Store the bottled stout in a cool, dark place for an additional 1-2 weeks to carbonate before consuming.
