Harvest ripe Cabernet Sauvignon grapes from the vineyard, ensuring they are free of rot and damage.

Harvesting Grapes

Crush the harvested grapes to extract the juice. A wine press can be used for this purpose.

Crushing Grapes

Add crushed Campden tablets to the must (crushed grapes), mixing well to sterilize the mixture and prevent unwanted fermentation.

Sterilizing Must

Sprinkle the wine yeast over the surface of the must and stir gently to incorporate.

Adding Yeast

Transfer the must into a fermentation vessel, cover with an airlock, and let it ferment at a stable temperature for 7-14 days, or until fermentation activity ceases.

Primary Fermentation

If desired, add malolactic bacteria to the wine after primary fermentation to soften the acidity. Allow it to ferment for an additional 2-3 weeks.

Malolactic Fermentation

Once fermentation is complete, taste the wine and add dried herbs, black licorice extract, and violet essence if desired. Adjust sweetness with sugar to taste.

Adding Flavorings

Rack the wine into a clean vessel to separate it from the sediment formed during fermentation.

Racking

Bottle the wine in sterilized bottles, ensuring they are sealed tightly. Store in a cool, dark place.
