Select ripe Chardonnay grapes from the vineyard. Ensure they are free from rot and other imperfections.

Harvesting Grapes

Crush the grapes to extract the juice. Press the crushed grapes to separate the juice from the skins and seeds.

In a sanitized fermentation vessel, combine the grape juice, water, and yeast. Stir gently to mix. Seal the vessel with an airlock and let it ferment at a stable temperature (around 65-75°F) for 1-3 weeks.

Fermentation

After fermentation is complete, add sulfites to the wine to prevent spoilage and stabilize the flavor.

Adding Sulfites

If desired, add malolactic bacteria to the wine to create a creamier texture and enhance the flavor profile. Allow it to ferment for another 2-4 weeks.

Secondary Fermentation (Optional)

Once fermentation is complete, transfer the wine to a clean carboy. Allow the wine to settle for a week to clarify.

Clarification

Once clarified, siphon the wine into sanitized bottles, leaving some space at the top. Cork the bottles securely.

Bottling

Store the bottles in a cool, dark place for at least 6 months to allow the flavors to develop.

Aging

Before bottling, mix in the lemon zest, orange zest, honey, and acid blend to enhance the citrus flavor profile.
