Strawberry Shake

Enjoy a creamy and refreshing regular-sized strawberry shake made with ripe strawberries and smooth vanilla ice cream.

Harvest Pinot Noir grapes when they are fully ripe, usually in late summer or early fall, ensuring they are free from blemishes.

Harvesting Grapes

Crush the harvested grapes to release the juice. You can use a grape crusher or do it by hand in a clean container.

Crushing Grapes

Transfer the crushed grapes (must) into a fermentation vessel. Add the wine yeast to the must and stir well to incorporate. Cover the vessel with a clean cloth, allowing it to breathe while preventing contaminants.

Fermentation

Dissolve the sugar in a small amount of warm water and add it to the fermentation vessel along with the gallon of water to help dilute the must.

Adding Sugar and Water

Add the oak chips to the fermentation vessel. Split the vanilla bean lengthwise, scrape the seeds into the must, and add the whole bean as well. This will infuse the wine with vanilla flavor.

Allow the must to ferment for about 1-2 weeks, stirring daily. Monitor the fermentation process; it should bubble and produce carbon dioxide.

Monitoring Fermentation

Once fermentation has slowed, press the must to separate the liquid from the solids. Use a wine press or a clean cloth to extract as much juice as possible.

Pressing the Wine

Transfer the pressed wine into a clean fermentation vessel for secondary fermentation. Add cedar chips if desired for added aroma.

Secondary Fermentation

Allow the wine to age for at least 6 months in a cool, dark place. This helps develop the flavors and smooth tannins.

Aging

Once aged, siphon the wine into clean bottles, leaving some space at the top. Seal the bottles with corks.

Bottling

Chill the wine as desired and serve, enjoying the flavors of red cherries and wild berries complemented by notes of vanilla and cedar.
