Select and harvest fresh California grapes, ensuring they are ripe and free from any rot or damage. Clean the grapes thoroughly to remove any pesticides or impurities.

Grape Preparation

Crush the grapes using a crusher or by hand to release the juice. Transfer the crushed grapes into a press and extract the juice, collecting it in a sanitized fermentation vessel.

Crushing and Pressing

Add the wine yeast to the grape juice in the fermentation vessel. Stir gently to incorporate the yeast. Cover with a fermentation lock and let it ferment at a controlled temperature (about 18-22°C) for 2-3 weeks.

Fermentation

After fermentation, add sulfites to the wine to stabilize it and prevent unwanted bacteria from developing. Stir well to ensure the sulfites are evenly distributed.

Sulfite Addition

After a week of fermentation, siphon the wine off the sediment (lees) into a clean vessel, a process known as racking. This helps clarify the wine.

Racking

Let the wine age in a cool, dark place for at least 2-3 months to develop its flavor and aroma. This process enhances the notes of strawberry and grapefruit.

Aging

Once aged, bottle the wine in sanitized bottles, sealing them with corks. Label the bottles as 'Blue Lobster Urban Winery Rosé' for identification.
