Select ripe Pinot Grigio grapes from the vineyard. Ensure they are healthy and free from rot.

Harvesting Grapes

Crush the grapes to release the juice. Press the crushed grapes to separate the juice from the skins and seeds.

Crushing and Pressing

In a sanitized fermentation vessel, combine the grape juice with 5 grams of yeast. Allow the mixture to ferment for about 2 weeks at a controlled temperature of 15-20°C (59-68°F).

Fermentation

Once fermentation is complete, siphon the wine off the sediment into a clean vessel, being careful not to disturb the sediment.

Racking

Add 0.5 grams of sulfites to stabilize the wine and prevent spoilage.

Adding Sulfites

Allow the wine to age in a cool, dark place for 3-6 months. This will enhance the flavors and allow the wine to develop its character.

Aging

Once aged, bottle the wine in sanitized bottles. Seal with corks and label them appropriately.

Bottling

Chill the wine to around 8-10°C (46-50°F) before serving. Enjoy the delicate notes of stone fruit and mineral undertones.
