Portuguese codfish grilled with olive oil, garlic, fresh green peppers, and onions.
Soak the salted codfish in water for 24 hours, changing the water at least 3 times to remove excess salt.
Preheat the grill to medium-high heat. Pat the codfish dry and brush it with olive oil, then season with salt and black pepper. Place the codfish on the grill and cook for about 6-8 minutes on each side, or until it is cooked through and has nice grill marks.
In a skillet, heat the remaining olive oil over medium heat. Add the sliced onions and minced garlic, sautéing until the onions are translucent. Add the sliced green peppers and cook for an additional 5 minutes until they are tender.
Place the grilled codfish on a serving plate, top with the sautéed vegetables, and garnish with fresh parsley.
