Prepare the Slaw

In a bowl, combine shredded cabbage, grated carrot, lemon juice, and a pinch of salt. Mix well and set aside to marinate.

Prepare the Catfish

In a shallow dish, mix cornmeal, flour, cajun seasoning, salt, and black pepper. In another dish, pour buttermilk.

Coat the Catfish

Dip each catfish fillet into the buttermilk, then dredge in the cornmeal mixture until fully coated.

Fry the Catfish

In a large skillet, heat vegetable oil over medium-high heat. Fry the catfish fillets for about 5-6 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.

Prepare the Sauce

In a small bowl, mix mayonnaise with hot sauce to create the house hot sauce mayo.

Assemble the Sandwich

Toast the burger buns on a griddle. Spread the hot sauce mayo on the bottom bun, add the fried catfish, top with lemon slaw and dill pickles, then place the top bun.

Serve the fried catfish sandwich with a side of crispy french fries.
