Preparation
Make the Butterfly Pea Tea
Boil 4 cups of water in a pot. Once boiling, remove from heat and add 1 cup of butterfly pea flowers. Let steep for 10-15 minutes.
Strain the Tea
After steeping, strain the tea into a pitcher, discarding the flowers. Allow the tea to cool to room temperature.
Prepare the Citrus Mix
In a separate bowl or pitcher, combine 1 cup of lemon juice, 1 cup of grapefruit juice, and 1 cup of orange juice. Stir well.
Infuse with Rosemary
Add 2 sprigs of fresh rosemary to the citrus mixture and let sit for 5-10 minutes to infuse the flavors.
Combine and Sweeten
Remove the rosemary from the citrus mix and combine it with the cooled butterfly pea tea. Sweeten with honey or your preferred sweetener to taste.
Serve
Serve the drink over ice in glasses, garnished with additional rosemary sprigs if desired.
