Prepare the Potatoes

Peel and cut the potatoes into quarters. Boil in salted water until tender, about 15-20 minutes. Drain and set aside.

Cook the Shallots and Mushrooms

In a large skillet, heat olive oil over medium heat. Add the chopped shallots and cook until translucent, about 3-4 minutes. Add sliced mushrooms and cook until they release their moisture and become golden brown, about 5-7 minutes. Season with salt and pepper.

Prepare the Chopped Steak

In a mixing bowl, combine the ground steak, salt, and pepper. Form into patties, about 1 inch thick.

Cook the Chopped Steak

In the same skillet, increase the heat to medium-high and add the patties. Cook for 4-5 minutes on each side, or until desired doneness. Remove the patties and set aside.

Make the Red Wine Demi-Glace

In the same skillet, pour in the red wine and scrape the bottom to deglaze. Add the beef demi-glace and simmer for about 5 minutes until it thickens slightly.

Serve

Place the chopped steak patties on plates, top with the shallots and mushrooms, and drizzle with the red wine demi-glace. Serve with boiled potatoes on the side.
