Preheat and prepare

Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or lightly oil it.

Halve and score mangoes

Wash the mangoes. Working with one mango at a time, slice off the two cheeks from either side of the large seed. If desired, trim remaining flesh from the seed. Score the flesh in a crosshatch pattern about 1/2 inch apart without cutting through the skin; alternatively, keep cheeks whole. Place mango halves flesh-side up on the prepared baking sheet.

Make glaze

In a small bowl whisk together the melted butter, light brown sugar, lime juice, ground cardamom (if using), and a pinch of sea salt until combined.

Glaze and roast

Brush or spoon the glaze evenly over the mango flesh. Roast in the preheated oven for 10–14 minutes, until the edges begin to caramelize and the flesh is tender when pierced with a knife. If you prefer more color, finish under the broiler 1–2 minutes while watching carefully to avoid burning.

Rest

Remove the mango from the oven and let it rest for 5 minutes to allow juices to settle.

Finish & Serving

Plate

Spoon or place a generous scoop (about 1/2 cup) of clotted cream ice cream on each serving plate or shallow bowl.

Add mango

Arrange one roasted mango cheek per serving alongside or slightly over the ice cream. If you trimmed flesh from the seed, spoon those roasted pieces on top of the ice cream.

Drizzle honey and add garnish

Drizzle about 1 tablespoon of local honey over each plate (adjust to taste). Sprinkle toasted chopped pistachios or toasted coconut over the mango and ice cream if using. Garnish with a mint leaf or two.

Serve immediately

Serve right away so the ice cream remains cold while the mango is warm — the contrast of warm roasted mango, cold clotted cream ice cream and sweet local honey is the intention.
