Method

Form Patties
Divide the HG Walter beef mince into two equal portions (for 2 mini patties). Gently form each portion into a tight ball then flatten to a patty about 1/2 inch (1.2 cm) thick and slightly larger than the bun (they shrink as they cook). Do not overwork the meat — handle just enough to hold shape.
Season
Season both sides of each patty with the fine sea salt and freshly ground black pepper just before cooking.
Cook Patties
Heat a cast-iron skillet or heavy frying pan over medium-high heat until hot. Add 1 tablespoon unsalted butter and let it foam. Place the patties in the pan (work in a single layer) and cook for 2 to 3 minutes on the first side without pressing. Flip and cook for another 1.5 to 2 minutes for medium, or longer to desired doneness. About 30–45 seconds before removing, place a slice of Red Leicester on each patty and cover the pan briefly to melt the cheese.
Buns & Assembly
Prepare Lettuce & Gherkins
Place the trimmed iceberg lettuce leaf on the bottom bun. Lay the thinly sliced gherkins on top of the lettuce (2 slices per burger) so they sit between lettuce and patty for crunch and to keep bun from getting soggy.
Sauce
Spread about 1 tablespoon of house burger sauce on the bottom bun (on top of the lettuce and gherkins) and a thin smear (about 1/2 tsp) of English mustard on the top bun. If using a premade house sauce, adjust amounts to taste.
Assemble
Place the hot cheeseburger patty onto the bottom bun assembly. Cap with the top bun, press gently to seat everything, and serve immediately so the cheese is melty and the bun stays crisp.
Serving & Notes
Serve the Mini Timmy burgers hot as sliders — two small burgers can be served per person as an appetizer or one per person for a small meal. Optional: add a pickle spear and fries on the side.
