Method

Prepare Syrups & Purée

Make simple syrup

Combine 0.75 cups granulated sugar and 0.75 cups water in a small saucepan. Warm over medium heat, stirring until sugar dissolves. Remove from heat and cool to room temperature. This yields 1.5 cups total; use 0.75 cups for the recipe and reserve the rest refrigerated for later use.

Make honey syrup

Combine 0.25 cups honey with 0.25 cups warm water in a jar and shake until fully combined and pourable. Chill.

Make or strain berry purée

If you don't have purée ready, blend 1 cup mixed berries with 1-2 tablespoons water until smooth. Press through a fine sieve into a bowl to remove seeds. Measure 0.5 cups of the strained purée for the batch.

Infuse Herbs

Lightly bruise the mint (0.5 cups) and basil (0.25 cups) by clapping between your palms or gently muddling in a bowl to release aromatics. Add the bruised herbs to a jar with the prepared honey syrup and let steep in the refrigerator for 15–30 minutes for a bright herb infusion. Strain out solids and reserve the infused syrup.

Mix Base Cooler Concentrate

In a pitcher, combine: 0.5 cups fresh lemon juice, 0.25 cups fresh lime juice, 0.5 cups strained berry purée, 0.75 cups simple syrup, and 0.25 cups herb-infused honey syrup. Stir vigorously until homogenous. Taste and adjust sweetness or acidity: add up to 2 tablespoons additional simple syrup if too tart, or 1–2 tablespoons more lemon/lime juice if too sweet.

Assemble Coolers (Non-Alcoholic)

Fill four 12-ounce (about 1.5 cup) glasses with crushed ice (about 1.5 cups crushed ice per glass). Add 3 tablespoons (approximately 1.5 fl oz) of the cooler concentrate to each glass.

Top each glass with 1 cup cold sparkling water or club soda, pouring gently to preserve fizz. Stir once briefly to integrate concentrate and soda (do not overmix).

Garnish each glass with a lemon wheel, lime wheel, a few whole berries, and a small sprig of mint or basil.

Assemble Coolers (Optional Boozy)

For a boozy version, reduce sparkling water to 0.75 cup per glass and add 1.5 ounces (3 tablespoons) of chosen spirit per glass (vodka or light rum for neutral profile; gin for herbal profile). Stir gently to combine. Taste and adjust: add more soda if too strong or more concentrate if too mild.

Serve & Storage

Serve immediately over crushed ice. Leftover concentrate will keep refrigerated in a sealed container for up to 5 days. Keep soda and ginger beer separate until serving to preserve carbonation.
