Crostini

Figs & topping

Method

Crostini

1

Slice and dress

Preheat oven to 400°F (200°C). Slice the baguette on a slight diagonal into 12–14 slices about 1/2 inch thick. Place slices on a baking sheet. Brush each slice lightly on both sides with olive oil (reserve about 1/2 tablespoon). Season with a light sprinkle of kosher salt and freshly ground black pepper.

2

Toast in the preheated oven for 8–10 minutes, flipping once halfway, until edges are golden and crisp. Remove and let cool slightly on a rack.

Whipped blue cheese spread

3

Make the spread

In a food processor or using a bowl and an electric hand mixer, combine the blue cheese and softened cream cheese. Pulse or beat until smooth and combined.

4

Add the heavy cream, lemon juice, honey, and 1/4 tsp freshly ground black pepper. Process or whip until light, airy, and spreadable. Taste and adjust honey or lemon for balance. Transfer to a small bowl and refrigerate until ready to assemble. (If too thick, add up to 1 tablespoon more cream.)

Figs & maple glaze

5

Prepare figs

Wash figs and pat dry. Trim stem ends and cut each fig in half lengthwise (for medium figs) so you have 24 halves. Arrange cut-side-up on a tray.

6

Make glaze and warm figs

In a small nonstick skillet over medium-low heat, combine the maple syrup and butter (if using). Warm gently until butter melts and syrup is glossy, about 1–2 minutes. Add the fig halves cut-side-up to the pan, cook 1–2 minutes until the cut face is warmed and just slightly caramelized; gently spoon glaze over each fig. Remove figs to a plate. Alternatively, you can brush the glaze on raw figs without heating if you prefer fresh fruit texture.

Assembly & finish

7

Spread about 1 heaping tablespoon of the whipped blue cheese mixture onto each crostini slice, leaving a small border so the spread doesn't slide off.

8

Place one glazed fig half on top of each crostini (cut-side-up). If using larger crostini or larger figs, use two halves per crostini as needed.

9

Drizzle any remaining maple glaze lightly over the arranged crostini (about 1/2 teaspoon per crostini). Sprinkle each with a small pinch of sea salt flakes to brighten flavors.

10

Garnish each crostini with a few chopped toasted nuts (if using) and a small sprig of fresh dill or microgreens. Serve immediately so crostini remain crisp.
