Prepare cauliflower

Trim the cauliflower into bite-sized florets (about 1 to 1½ inches). Pat dry thoroughly with paper towels — excess moisture prevents batter adhesion and increases oil splatter. Season florets lightly with 1 tsp salt and ½ tsp black pepper; toss to coat.

Set a wire rack over a sheet pan to hold fried cauliflower and keep it crisp while you finish frying.

Tempura Batter

Make batter

In a medium bowl, whisk together 1 cup all-purpose flour, ¼ cup rice flour or cornstarch, and ½ tsp baking powder plus ½ tsp kosher salt. In a separate chilled bowl, lightly beat the cold egg, then add 1 cup ice-cold sparkling water and stir to combine. Pour the liquid into the dry ingredients and mix gently with chopsticks or a fork until just combined — small lumps are fine. Keep the batter cold (place bowl in an ice bath or in refrigerator) and do not overmix; a cold, slightly lumpy batter yields the lightest, crispiest coating.

Heat 3 to 4 cups of vegetable oil in a heavy-bottomed pot or deep fryer to 350°F (175°C). If you don’t have a thermometer, test with a small drop of batter: it should sizzle and rise immediately without burning.

Frying

Fry in batches

Working in small batches (6–8 florets at a time depending on pot size), gently dip each seasoned floret into the cold batter, letting excess drip off, then carefully lower into the hot oil. Fry until the batter is pale golden and crisp, about 3–4 minutes per batch. Avoid overcrowding to keep oil temperature steady.

Use a slotted spoon or spider to transfer fried florets to the wire rack set over a sheet pan to drain. If oil temperature drops, raise heat briefly or add the optional ½ cup extra oil to maintain temperature. Keep finished pieces warm in a 200°F (95°C) oven while you fry remaining batches.

Hot Jalapeño Honey

Make the sauce

While frying (or directly after), combine ¾ cup honey, thinly sliced jalapeño (including seeds for more heat), 1 tbsp apple cider vinegar, ¼ tsp red pepper flakes, 1 tsp fresh lime juice, and ¼ tsp salt in a small saucepan. Warm over low heat just until honey thins and jalapeño flavor infuses — about 3–4 minutes. Do not boil aggressively; just keep it warm and stir occasionally. Taste and adjust heat by adding more jalapeño slices or red pepper flakes if desired.

If you prefer a smooth drizzle, strain out jalapeño slices after warming, reserving infused honey. Otherwise leave slices in for visual interest and extra heat.

Assembly & Serve

Toss or drizzle

Place hot tempura cauliflower in a large bowl, drizzle 3–4 tablespoons of the warm hot-jalapeño honey over them and toss gently to coat. Add more honey to taste — you want a glossy, slightly sticky coating but not saturation that makes batter soggy.

Transfer to a serving platter. Sprinkle with 2 tbsp thinly sliced green onions and 1 tsp toasted sesame seeds. Serve immediately with lime wedges for squeezing over the cauliflower.

Leftover honey can be stored in an airtight jar in the refrigerator for up to 2 weeks; gently warm before using. Leftover fried cauliflower is best re-crisped in a 400°F (205°C) oven for 6–8 minutes rather than microwaving.
