Assemble drink
In a 16 oz serving glass, add the ice. Pour 1.5 cups house cold brew concentrate over the ice, then add 1 cup cold water to dilute to drinking strength. Stir gently to combine.
Add 2 tbs butterscotch syrup to the diluted cold brew and stir until evenly distributed. Taste and adjust: add up to 1 tbs more syrup if you prefer a sweeter, stronger butterscotch flavor.
Vanilla Cold Foam
Combine ingredients
In a small jar or frothing pitcher combine 0.5 cups milk, 2 tbs heavy cream, 1 tbs vanilla syrup, 0.25 tsp vanilla extract, and 0.5 tsp granulated sugar (if using).
Froth the foam
Using an electric milk frother, handheld frother, or steam wand set to low, froth the mixture until it becomes thick and creamy with a dense microfoam (about 20–40 seconds with an electric frother; longer with a handheld). If using a whisk, vigorously whisk for 1–2 minutes until foamy.
Let the foam settle for 10–15 seconds to reach a stable consistency suitable for pouring.
Top the cold brew
Gently spoon or pour the vanilla cold foam over the butterscotch cold brew, creating a distinct foam layer about 1/2–3/4 inch thick.
Garnish (optional)
Drizzle 1 tbs butterscotch drizzle or extra butterscotch syrup in a swirl over the foam. Finish with a light pinch of flaky sea salt if desired.
Serve immediately with a straw for sipping through the foam or without for scooping foam with a spoon.
