Prepare oven and pan

Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line with parchment, leaving an overhang for easy removal.

Mix wet ingredients

In a large bowl, mash the ripe bananas until mostly smooth. Stir in the melted butter, granulated sugar, egg, buttermilk (or yogurt), and vanilla extract until combined.

Combine dry ingredients

In a separate bowl whisk together the all-purpose flour, baking soda, baking powder, and salt.

Fold batter

Add the dry ingredients to the banana mixture and fold gently until just combined — do not overmix. Fold in the chopped walnuts evenly through the batter.

Bake

Pour batter into the prepared loaf pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs (not wet batter). If the top browns too fast, tent loosely with foil for the last 15 minutes.

Cool and slice

Let the loaf cool in the pan on a wire rack for 10 minutes, then use the parchment overhang to lift the loaf out. Cool completely (about 1–1.5 hours) before slicing into 8 even slices for assembling sandwiches. For best texture, slice with a serrated knife.

Whip cream and mascarpone

Chill a mixing bowl and beaters briefly if possible. In the chilled bowl, combine cold mascarpone, cold heavy cream, powdered sugar, lemon zest (if using), and vanilla extract. Whip on medium-high speed until soft peaks form and mixture is spreadable but still holds shape, about 1.5–2 minutes. Taste and adjust sweetness.

Transfer and chill

Transfer the whipped mascarpone cream to a bowl, cover, and keep refrigerated until ready to assemble. If it becomes too soft, chill 10–15 minutes before assembling.

Assembly & Garnish

Toast bread (optional)

If desired, lightly butter the banana bread slices and toast in a skillet over medium heat or under a broiler for 30–60 seconds per side until golden. This step adds flavor and helps the sandwich hold up to the cream and berries.

Prepare berries and almonds

If using strawberries, halve or slice them. Lightly toast the sliced almonds in a dry skillet over medium heat, stirring, until fragrant and lightly colored, about 2–3 minutes. Set aside to cool.

Assemble sandwiches

Spread about 2–3 tablespoons of whipped mascarpone cream on one slice of banana bread. Top with a small handful (about 2 tablespoons) of mixed berries, a sprinkle of toasted sliced almonds (about 1 tablespoon), and a light drizzle of honey (about 1 teaspoon). If desired, add a tiny pinch of coarse sea salt to the honey to enhance flavor. Top with a second slice of banana bread to form a sandwich. Repeat to make 4 sandwiches (using 8 slices).

Serve

Serve immediately, or refrigerate assembled sandwiches for up to 1 hour for firmer cream. Drizzle additional honey and sprinkle remaining almonds and a few extra berries on the plate for presentation.
