Prepare dry ingredients
In a large bowl whisk together 1.25 cups whole wheat flour, 0.75 cups bread or all-purpose flour, 0.5 cups rolled oats, 2 tablespoons brown sugar, 2 teaspoons baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon fine sea salt until evenly combined.

Mix wet ingredients
In a separate medium bowl whisk together 1 cup buttermilk (or 1 cup milk + 1 tablespoon vinegar, rested 5 minutes), 3 tablespoons melted butter or oil, 1 large egg, and 1 tablespoon molasses (if using) until smooth.

Combine batter
Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently with a spatula or wooden spoon until just combined and no large streaks of flour remain. Do not overmix — a slightly lumpy batter is fine. Fold in 1/4 cup sunflower seeds or chopped walnuts now if using.

Preheat griddle or skillet
Heat a large heavy skillet or cast-iron griddle over medium heat for 3–5 minutes until evenly hot. Lightly grease the surface with about 1 tablespoon unsalted butter, spreading it so the fat coats the cooking area.

Cook bread rounds
Drop batter by 1/3-cup scoops onto the hot griddle (to make 4–6 rounds depending on size). Flatten each mound slightly with the back of the spoon to form 1/2–3/4-inch thick rounds. Cook until the edges look set and small bubbles appear on the surface, 3–4 minutes.

Flip and finish
Carefully flip each round and cook the second side 3–4 minutes more, pressing gently with a spatula for even contact. The breads are done when an instant-read thermometer inserted into the center reads 200–205°F (93–96°C) or when the interior springs back and the exterior is deep golden brown.

Keep warm and serve
Transfer cooked griddled breads to a wire rack set over a baking sheet and keep warm in a 200°F (95°C) oven if necessary while you finish the rest. Serve warm with the remaining 1 tablespoon butter and honey or extra butter alongside.
