Make the choux base

In a medium saucepan combine 1 cup water, 1/2 cup whole milk, 4 tbs unsalted butter, 1 tbs granulated sugar and 1/4 tsp salt. Bring to a vigorous simmer over medium heat until the butter is fully melted and the mixture just comes to a boil.

Add flour and cook

Remove the pan from the heat and add 1 cup all-purpose flour all at once. Stir vigorously with a wooden spoon until the mixture pulls away from the sides of the pan and forms a smooth, glossy ball (about 1–2 minutes). Return to low heat and cook, stirring constantly, for 30–60 seconds to dry the dough slightly.

Cool slightly, then add eggs

Transfer the dough to a mixing bowl or stand mixer bowl and let cool for 3–4 minutes (so it stops steaming but is still warm). Add the eggs one at a time, beating thoroughly after each addition until the dough is smooth and shiny and falls in a thick ribbon when lifted. Stir in 1 tsp vanilla extract and 1 tsp grated lemon zest if using. The final consistency should be pipeable but not runny—thick enough to hold shape.

Heat oil

Pour about 3–4 cups neutral oil into a heavy-bottomed pot or deep fryer, leaving at least 3 inches of headspace. Heat the oil to 350°F (175°C). If you don't have a thermometer, test by dropping a small bit of dough — it should sizzle and rise slowly to the surface.

Portion the zeppole

Fit a piping bag with a 1/2–3/4 inch plain round tip or use a spoon. Pipe or scoop walnut-to-golf-ball-sized mounds (about 1–1.5 tbs dough each) into a small cup of water or onto a bench to help release. Avoid overcrowding—fry 4–6 at a time depending on pot size.

Fry until golden

Carefully drop the dough mounds into the hot oil. Fry, turning occasionally with a spider or slotted spoon, until puffed and deep golden on all sides, about 3–5 minutes per batch. Adjust heat to maintain 325–350°F so they brown but do not burn and cook through.

Drain

Use a slotted spoon to transfer cooked zeppole to a rack set over a baking sheet or paper towels to drain briefly (1–2 minutes).

Dust with sugar

While still slightly warm, toss or dust the zeppole generously with 1 cup confectioners' sugar. For a variation, mix 1 cup powdered sugar with 1/2 tsp cinnamon and dust.

Fill (optional)

If using a filling, fit a small piping bag with a small round tip or snip the end. Poke a hole in the side of each zeppola with the tip and pipe in about 1–2 tbs pastry cream, ricotta mixture, lemon curd, or chocolate until filled.

Serving

Serve zeppole warm, dusted with extra powdered sugar. They are best the day they are made. Leftovers can be reheated briefly in a 350°F (175°C) oven for 5–7 minutes to refresh crispness.
