Prepare Glass

Chill and ice

Place a large wine glass in the freezer for 5–10 minutes or fill it with ice water while preparing ingredients. When ready, discard the ice water and add 3 large ice cubes to the glass.

Combine bittersweet base

In a mixing glass or small pitcher, pour 2 oz Aperol, 0.5 oz fresh orange juice, 0.25 oz fresh lemon juice, and 0.25 oz simple syrup. Stir gently to combine — no need to dilute heavily; just marry the juices and syrup with the Aperol.

Build in glass

Pour the Aperol mixture over the ice in the chilled wine glass. Slowly add 3 oz chilled Prosecco by pouring gently down the side of the glass to preserve bubbles. Top with 1 oz chilled soda water and give one very gentle stir (about 3 slow turns) to integrate while retaining effervescence.

Garnish & Serve

Float one fresh orange slice on the surface, lightly slap a mint sprig between your palms to release aroma and rest it against the glass rim or tuck it into the ice beside the orange. Serve immediately with a straw or stirrer if desired.
