Using bottled San Pellegrino flavored beverage
If you are using a ready-made San Pellegrino flavored drink (Limonata, Aranciata, Pompelmo), skip making syrup. Measure 4 fl oz (1/2 cup) of the flavored drink to use as the syrup base and chill. You can reduce sweetness by diluting with sparkling water in the final assembly.
Making a quick fresh fruit syrup (optional)
In a small saucepan, combine 1/2 cup fresh fruit purée or fresh citrus juice and 2 tablespoons granulated sugar. Warm gently over low heat, stirring until sugar dissolves (about 2–3 minutes). Do not boil. Remove from heat and cool to room temperature, then chill in the refrigerator until cold (about 15–20 minutes). This yields ~1/2 cup of syrup equivalent.
Adjust flavor
Taste the syrup or bottled flavored drink. If it's too intense, dilute with a tablespoon or two of chilled sparkling water. If you want more brightness, stir in 1–2 teaspoons fresh lemon or lime juice and chill briefly.

Fill a tall glass (12–16 oz) with 1 cup of ice cubes.
Pour 1/2 cup (4 fl oz) of the chilled syrup or flavored drink over the ice. This is the concentrated flavor base of the Italian soda.
Slowly add 12 fl oz chilled San Pellegrino sparkling water (or 10 fl oz sparkling water + 2 fl oz club soda if you prefer slightly lighter fizz) directly into the glass. Pour gently over the back of a spoon or down the side of the glass to preserve carbonation and create an attractive layered effect.
Stir gently once with a long spoon 1–2 times to combine the syrup and sparkling water without flattening the carbonation.
Ice & garnish
Garnish with a fresh citrus wheel or twist placed on the rim or floated on top. If using berries, drop 3–4 chilled berries into the glass.
Add a sprig of fresh mint for aroma, lightly slap the mint between your palms before placing it to release oils.
Serve immediately with a straw. Stir again briefly before drinking if the syrup has settled.
