Chill and prepare
Chill the San Pellegrino Limonata bottle thoroughly in the refrigerator for at least 2 hours so the drink is cold. While it chills, prepare fresh lemon juice by squeezing one small lemon and measure 15 ml (about 1 tablespoon). If using honey, mix equal parts honey and warm water to make a honey syrup; otherwise use simple syrup.
Add citrus and syrup
Pour 15 ml fresh lemon juice over the ice, then add 10 ml simple syrup (or honey syrup). These small additions brighten the bottled soda and adjust sweetness to taste. If you prefer less sweet, reduce syrup to 5 ml.
Stir gently
Use a bar spoon or long spoon to gently stir once or twice to incorporate the lemon juice and syrup with the soda without losing too much carbonation.
