Preparation and Cooking

Prepare the Peppers

Preheat your oven to 180°C (350°F). Cut the tops off the Anaheim peppers and carefully remove the seeds and membranes. Set aside.

Make the Filling

In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the grated carrots and cook for another 2-3 minutes. Mix in the ground veal, beef, and pork, and cook until browned. Season with salt, pepper, and Italian seasoning. Add cognac and cook for an additional minute. Remove from heat and stir in half of the diced mozzarella.

Stuff the Peppers

Carefully stuff each Anaheim pepper with the meat and cheese mixture, pressing down gently to pack it in.

Roast the Peppers

Place the stuffed peppers in a baking dish. Top each pepper with the remaining diced mozzarella. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.

Remove from the oven and let cool slightly before serving. Enjoy your stuffed Anaheim hot peppers!
