Prepare the Prime Rib
Preheat your oven to 450°F (232°C). In a small bowl, mix together the salt, black pepper, garlic powder, and chopped rosemary. Rub the olive oil over the prime rib and then apply the spice mixture evenly over the roast.
Searing the Roast
Place the prime rib in a roasting pan and put it in the preheated oven. Roast for 20 minutes at 450°F (232°C) to develop a nice crust.
Slow Roasting
After 20 minutes, reduce the oven temperature to 325°F (163°C). Continue to roast the prime rib for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.
Resting the Meat
Once cooked, remove the prime rib from the oven and let it rest for at least 20 minutes before slicing. This allows the juices to redistribute.
Serving
Slice the prime rib and serve it with the jus alongside mashed potatoes and your choice of vegetable.
