Preparing the Filet Mignon

Sear the Steak

Preheat your skillet over medium-high heat. Season the filet mignon with salt and black pepper. Add olive oil to the skillet and sear the steak for 3-4 minutes on each side, or until it reaches your desired doneness.

Rest the Steak

Remove the steak from the skillet and let it rest for 5 minutes before slicing.

Making Sour Cream Mashed Potatoes

Boil Potatoes

Peel and cube the Yukon Gold potatoes. Boil them in salted water until tender, about 15-20 minutes.

Mash Potatoes

Drain the potatoes and return them to the pot. Add sour cream, butter, milk, and salt. Mash until smooth and creamy.

Sauté Vegetables

In a separate pan, heat olive oil over medium heat. Add bok choy and mushrooms, seasoning with salt and pepper. Sauté for about 5-7 minutes until tender.

In the same skillet used for the steak, deglaze with red wine, adding beef stock. Reduce over medium heat until thickened, about 10 minutes.

In a saucepan, combine sake and reduce by half. Whisk in butter until emulsified. Stir in wasabi paste.

Using a food processor or a zip-top bag and rolling pin, crush the wasabi peas into a crumb.
