Hummus (whole chickpea style)

    Prep the chickpeas

    If using canned chickpeas, drain and rinse thoroughly. Reserve up to 1/4 cup of the liquid (aquafaba) if you want to thin the hummus; otherwise use cold water. For firmer texture, pat chickpeas dry with a towel.

    Make base hummus

    In a food processor, combine 2 cups of the whole chickpeas, 1/2 cup tahini, 1/4 cup lemon juice, 2 tablespoons olive oil, 2 minced garlic cloves, 1 teaspoon salt, and 1/2 teaspoon ground cumin. Pulse until a coarse, slightly chunky purée forms. Scrape down the bowl as needed. Add up to 1/4 cup cold water or reserved aquafaba, 1 tablespoon at a time, to reach a thick but spoonable consistency. Stop before fully smooth — this recipe keeps some texture.

    Fold in remaining whole chickpeas

    Transfer the puréed hummus to a bowl. Add the remaining 1 cup whole chickpeas and gently fold them in so the hummus has noticeable whole beans throughout for texture and visual appeal.

    Taste and adjust seasoning with additional salt, lemon juice, or olive oil if needed. Transfer hummus to a shallow serving bowl and create a wide, shallow well in the center for sauce and garnish.

Herb Tahini Sauce

    In a blender or small food processor combine 1/2 cup tahini, 1/4 cup lemon juice, 1/4 cup cold water, 1 minced garlic clove (about 1 tsp), 1/4 cup chopped parsley, 1/4 cup chopped cilantro, 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon ground cumin. Blend until smooth and creamy, adding an extra tablespoon of water if necessary to make a pourable but viscous sauce. Taste and adjust salt or lemon to balance the bitterness of tahini.

    Heat a large skillet over medium-high heat and add 2 tablespoons olive oil. When hot, add the remaining 1 cup whole chickpeas and sauté, stirring occasionally, until they develop light golden-brown edges, about 5–7 minutes. Sprinkle 1/2 teaspoon smoked paprika and 1/4 teaspoon sea salt, stirring to coat. Remove from heat and if desired toss with 1 teaspoon lemon zest for brightness.

    Warm the pita: lightly brush each pita with a bit of olive oil and grill or heat in a dry skillet over medium heat until lightly charred and pliable, about 30–60 seconds per side. Alternatively, toast in a 400°F (200°C) oven for 3–4 minutes.

    Assemble and serve: spoon the hummus into a shallow bowl, drizzle several tablespoons of the herb tahini sauce over the center and around the hummus. Scatter the sautéed golden chickpeas on top and around the hummus. Garnish with a drizzle of extra-virgin olive oil, a pinch of smoked paprika, and 2 tablespoons chopped fresh parsley. Serve with warm grilled pita on the side for scooping.
