    Make sauce

    Heat 1 tablespoon olive oil in a medium skillet over medium heat. Add the chopped onion and sauté until translucent, about 4–5 minutes. Stir in the minced garlic and chopped jalapeño (if using) and cook 30 seconds until fragrant. Add the chopped tomatoes, cumin, oregano, salt, and black pepper. Bring to a simmer and cook, stirring occasionally, until the sauce reduces slightly and thickens, 8–10 minutes. Mash lightly with the back of a spoon or use an immersion blender for a smoother texture. Stir in chopped cilantro and 1 teaspoon lime juice. Keep warm over very low heat.

Black beans

    In a small saucepan or skillet, heat 1 teaspoon olive oil over medium heat. Add the rinsed black beans, 1/4 teaspoon cumin, 1/4 teaspoon salt and a pinch of black pepper. Cook 3–5 minutes until beans are heated through and slightly softened. Mash about one-third of the beans with the back of a spoon to create a creamy but chunky texture. Stir in 1/2 teaspoon lime juice and remove from heat. Keep warm.

Tortillas & frying

    Pour about 1/2 cup vegetable oil into a large skillet to reach roughly 1/8–1/4 inch depth and heat over medium-high until shimmering but not smoking (about 350°F if using a thermometer). Pat tortillas dry with a towel and lightly salt them (about 1/4 tsp divided). Working in batches, fry each tortilla 30–45 seconds per side or until crisp and golden but still flexible enough to hold toppings. Transfer to a plate lined with paper towels to drain. Keep warm in a low oven (200°F / 95°C) on a rack if desired.

Chorizo (optional)

    If using chorizo, heat a nonstick skillet over medium heat (no additional oil needed). Crumble the raw chorizo into the pan and cook, stirring, until browned and cooked through, 6–8 minutes. Drain excess fat on a paper towel-lined plate and keep warm.

Eggs

    Heat 1 tablespoon butter or neutral oil in a nonstick skillet over medium-low heat. Crack eggs into the pan and cook sunny-side-up until whites are set but yolks remain runny, 3–4 minutes; cover the pan for 30–60 seconds if you prefer whites set on top. Season eggs with a pinch of salt and 1/8 teaspoon black pepper. For firmer yolks, cook an extra 1–2 minutes.

Assembly & toppings

    Place two crispy tortillas per serving on warmed plates. Spoon about 1/4 cup warmed black beans onto each tortilla and spread slightly, then sprinkle about 2 tablespoons shredded cheddar over the beans so it melts a little from the warmth. Spoon 1/4 cup ranchero sauce over the beans/cheese on each tortilla. If using chorizo, distribute cooked chorizo evenly over the tortillas now (about 3 oz per serving). Gently place a sunny-side-up egg on each tortilla (one egg per tortilla). Dollop about 2 tablespoons guacamole and 2 tablespoons sour cream beside or atop the eggs. Garnish with a sprinkle of chopped cilantro and serve with lime wedges to squeeze over before eating.

Serve & notes

    Serve immediately while tortillas are crisp and eggs are warm. To make ahead: prepare ranchero sauce and beans up to 2 days ahead and reheat gently. Keep tortillas separate and fry just before serving for best texture. Add chorizo for a heartier option (+$4 as an add-on).
