Sparkling base

Chill bottle
Ensure the prosecco or alcohol-free sparkling wine is well chilled (ideally 6–8°C / 43–46°F). Place bottle in refrigerator for at least 3 hours or in an ice bucket for 20–30 minutes before serving.

When ready to serve, gently remove bottle from fridge or ice bucket. Keep bottle upright until opening to preserve bubbles.
Juice options (choose one)

Select one juice for the bottle: orange, guava, pineapple, or grapefruit. Use freshly squeezed or high-quality chilled juice for best flavor. Measure approximately 750 ml (a standard 25 fl oz) if serving by the bottle; adjust quantity proportionally if offering smaller single-serve portions.

Taste the juice and adjust coldness — if it’s not cold enough, chill briefly in refrigerator or add ice to a pitcher (see garnish section). Avoid adding ice directly to individual glasses if you want to preserve effervescence for longer.
Assembly (single-bottle service)

Decide presentation: serve the bottle on ice with a separate chilled carafe of the chosen juice for guests to mix to taste, or pre-mix a bottle-sized batch in a pitcher for immediate service.

To serve plated (guests mix themselves)
Place the chilled bottle of prosecco or sparkling wine on ice. Pour the chosen chilled juice into a chilled carafe or jug. Provide champagne flutes or wine glasses and let guests pour roughly 1 part juice to 2 parts sparkling wine (approx. 120 ml sparkling : 60 ml juice per glass) or adjust to taste.

To pre-mix a bottle-sized batch
In a chilled pitcher, combine 1 bottle (750 ml) of prosecco or alcohol-free sparkling wine with 375 ml (approx. 1.5 cups) of the chosen juice for a 2:1 sparkling-to-juice ratio. Gently stir once with a bar spoon to combine—do not vigorously stir to avoid losing carbonation. Immediately pour into chilled flutes or serve the pitcher with ice on the side.

Prepare garnishes according to the juice choice: orange slices for orange juice, guava wedges for guava, pineapple chunks for pineapple, or grapefruit twists for grapefruit. Chill garnishes briefly if possible.

To garnish a glass, thread a slice, wedge, chunk or twist onto a cocktail pick and rest on the rim, or float a small piece in the glass. If serving a pitcher, add a few pieces of fruit to the pitcher (avoid too much fruit, which can absorb juice and sink).

Serve immediately after mixing to preserve bubbles. Provide napkins and a small plate for garnishes. Offer both prosecco and alcohol-free sparkling wine as options so guests can choose.
Storage & leftovers

If you have leftover pre-mixed bubbly and juice, transfer to a sealed bottle or airtight container and refrigerate. Consume within 24 hours; expect some loss of carbonation. Store unused unopened bottles of sparkling wine or juice refrigerated according to label instructions.
