Wash and chop

Rinse kale thoroughly under cold water. Pat dry or use a salad spinner. Fold each kale leaf in half lengthwise and slice away the tough stem. Stack leaves, roll loosely, and finely chop into bite-sized ribbons until you have about 6 cups packed. If using spinach, rough chop and combine with kale.

Massage kale

Place chopped kale in a large mixing bowl. Add 1 tablespoon of the olive oil and a pinch (about 1/8 tsp) of salt. With clean hands, gently massage the kale for 1–2 minutes until leaves soften and darken in color; this reduces bitterness and tenderizes the greens.

Prepare fruit

Core and thinly slice the apple (leave the skin on for texture). Segment the orange over a small bowl to catch juices, removing membranes, or thinly slice if preferred. Add apple slices, orange segments and dried cranberries to the bowl with the massaged kale.

Make Dressing

Combine dressing ingredients

In a small jar or bowl, combine 4 tablespoons extra-virgin olive oil, 2 tablespoons apple cider vinegar, 2 tablespoons honey, 1 teaspoon Dijon mustard, 1 tablespoon fresh lemon juice, 1/2 teaspoon fine sea salt, and 1/4 teaspoon freshly ground black pepper.

Emulsify

Whisk vigorously for 20–30 seconds or secure a lid on the jar and shake until the dressing is well emulsified and slightly thickened. Taste and adjust seasoning — add more honey for sweetness, vinegar for brightness, or salt to preference.

Toast nuts

Place 1/2 cup sliced almonds (or chopped walnuts) in a dry skillet over medium heat. Toast, stirring frequently, for 3–5 minutes until fragrant and lightly golden. Transfer to a plate to cool so they don’t continue cooking in the hot pan.

Dress the salad

Pour about two-thirds of the dressing over the bowl with kale and fruit. Toss thoroughly with salad tongs or clean hands so all greens are lightly coated. Let sit for 3–5 minutes to allow flavors to meld and kale to relax further.

Add crunch and cheese

Add the toasted nuts and 1/2 cup crumbled feta or goat cheese to the salad. Gently fold to combine. If using optional add-ins like avocado or cooked grains, fold them in now.

Finish and serve

Taste and finish with remaining dressing if needed. Adjust salt and pepper to taste. Transfer to a serving bowl or divide among plates. Serve immediately so toasted nuts remain crisp and avocado (if used) stays fresh.
