Method
For the Tea Base
Brew the teas
Bring 4 cups of water to a near boil. Remove from heat and steep 3 tablespoons of loose-leaf black tea (or 3 black tea bags) for 5 minutes to make strong black tea, then remove leaves/bags. In the same water or separately, steep 1 tablespoon loose green tea (or 1 green tea bag) for 2–3 minutes to avoid bitterness, then remove. Combine the brewed black and green tea and cool to room temperature (about 20–30 minutes) or place in the refrigerator to chill.
For Sweetening & Flavor
Make simple syrup
In a small saucepan combine 1 cup granulated sugar and 1 cup water. Heat over medium, stirring occasionally, until sugar is fully dissolved and syrup is clear. Remove from heat and cool to room temperature.
Combine and flavor
In a pitcher, add the cooled brewed tea (3 cups black + 1 cup green = 4 cups total). Stir in 1/2 cup fresh lemon juice, 1/4 cup natural fruit concentrate or flavored syrup, and the cooled simple syrup. Taste and adjust: for sweeter, add up to 2 additional tablespoons simple syrup; for brighter citrus, add another tablespoon lemon juice. Chill for at least 1 hour so flavors meld.
Optional Add-ins and Garnish
To serve, fill glasses with ice, pour chilled tea over the ice, and garnish with lemon slices and mint leaves. Serve immediately. Keeps refrigerated in a covered container for up to 4–5 days; stir or shake before serving as separation may occur.
