Preheat and prepare

Preheat oven to 400°F (205°C). Pat chicken breasts dry with paper towels so marinade adheres.

In a small bowl, whisk together olive oil, lemon juice, minced garlic, smoked paprika, dried thyme, salt and black pepper to make the marinade.

Place chicken in a shallow baking dish or rimmed sheet, pour marinade over chicken and turn to coat evenly. Let sit at room temperature 10–15 minutes or refrigerate up to 2 hours for more flavor.

Roast chicken in the preheated oven for 18–25 minutes, until internal temperature reaches 165°F (74°C) and juices run clear (timing depends on breast thickness). Remove from oven and let rest 5–8 minutes.

Using two forks or tongs, shred the rested chicken into bite-sized pulled pieces. Reserve any juices in the baking dish and mix into shredded chicken for moisture.

Honey Mustard & Finish

While chicken rests, make the honey mustard: in a small bowl whisk together mayonnaise, Dijon mustard, honey and apple cider vinegar until smooth. Season with 1/4 tsp salt and 1/4 tsp freshly ground black pepper; taste and adjust sweetness or acidity as desired.

If using, brush flatbreads lightly with melted butter on both sides and warm in a dry skillet over medium heat 30–45 seconds per side or place in a 350°F (175°C) oven for 4–6 minutes until pliable and slightly toasted.

Assembly

Place a warmed flatbread on a work surface. Spread about 1–1.5 tablespoons of honey mustard down the center of each flatbread.

Layer half of the shredded roasted chicken on each flatbread (about 8 oz chicken per flatbread if using 1 lb total), then top with 2 slices of Swiss cheese per flatbread arranged so they will melt over the warm chicken.

Top cheese with 4–6 tomato slices (enough to cover), then a generous handful (about 1 cup) of mixed salad greens.

If you want the cheese more melted, place assembled flatbreads on a baking sheet and heat in a 350°F (175°C) oven 3–5 minutes until cheese softens. Alternatively, cover with a microwave-safe lid and microwave 20–30 seconds.

Fold or roll the flatbread around the fillings, slice in half if desired, and serve immediately with extra honey mustard on the side.
