Horseradish Sour Cream Sauce

Make the sauce

In a small bowl, combine 1/2 cup sour cream, 1 tsp prepared horseradish, 1 tsp fresh lemon juice, 1/4 tsp salt, 1/8 tsp pepper and 1 tsp minced chives or parsley (if using). Stir until smooth. Taste and adjust horseradish or lemon for desired heat/tang. Chill in refrigerator while you prepare other components.

Prep salmon

Pat the salmon fillets dry with paper towels. Lightly coat both sides with 1 tbsp olive oil. Season both sides evenly with 2 tbsp Cajun blackening spice, 1 tsp salt and 1 tsp coarsely ground black pepper, pressing the spice into the flesh so it adheres.

Cook salmon (stovetop - preferred for blackening)

Heat a heavy skillet (cast-iron recommended) over medium-high heat until very hot, about 3–4 minutes. Add 1 tbsp unsalted butter and swirl to coat. Add the salmon fillets, presentation side down first (seasoned side), and cook undisturbed for 3–4 minutes until a dark crust forms. Flip carefully and cook an additional 2–4 minutes, depending on thickness, until salmon is opaque and flakes easily with a fork (internal temp ~125–130°F/52–54°C for medium-rare to medium). Remove from heat and let rest 2 minutes; break into large flakes for topping the flatbreads.

Alternative oven method

If you prefer to oven-finish, preheat oven to 450°F (230°C). Sear salmon in a hot ovenproof skillet for 1–2 minutes per side to form crust, then transfer to oven and roast 5–7 minutes until done. Rest 2 minutes and flake.

Warm flatbreads & wilt spinach

Warm flatbreads briefly in a dry skillet over medium heat (about 30–45 seconds per side) or in a 350°F (175°C) oven for 3–4 minutes. In the same skillet used for salmon (wipe out excess but leave fond for flavor), add the baby spinach and sauté over medium heat for 1–2 minutes until just wilted; season lightly with a pinch of salt. Remove from heat.

Assemble flatbreads

Spread 1–2 tablespoons of the chilled horseradish sour cream sauce over each warm flatbread, leaving a small border. Divide the wilted spinach evenly between the flatbreads, then scatter diced tomato (about 1/2 cup per flatbread if using 2 flatbreads) and thinly sliced red onion on top. Top each flatbread with large flakes of the blackened salmon, distributing evenly.

Finish & serve

Finish with an extra drizzle of the horseradish sauce if desired and a squeeze of fresh lemon over the salmon. Sprinkle a pinch of smoked paprika for color if you like. Serve immediately while flatbread and salmon are warm.
