Strawberry Base
Make strawberry puree
Place the hulled and sliced fresh strawberries, granulated sugar, lemon juice, and water into a blender or food processor. Blend on high until smooth, about 20–30 seconds. If you prefer a very smooth base, blend longer.
Adjust sweetness and strain
Taste the puree and adjust sweetness if needed by adding up to 1 additional tablespoon of sugar and blending briefly. For a silkier mocktail, strain the puree through a fine-mesh sieve into a bowl, pressing with a spoon to extract as much liquid as possible. You should end up with roughly 3/4 to 1 cup of strawberry liquid.
Chill if needed
If the puree is warm from blending, chill it in the refrigerator for 10–15 minutes. The base should be cool before assembling to keep the sparkling water from going flat quickly.
Assembly & Sparkle
Prepare glasses
Fill two tall serving glasses evenly with ice (about 1/2 cup ice per glass). Add 3 fresh strawberry slices and 4–5 mint leaves to each glass, lightly bruising the mint between your fingers to release aroma before adding.
Divide strawberry base
Pour the chilled strained strawberry puree evenly between the two glasses (about 1/3 to 1/2 cup per glass). If you have additional puree, reserve in the refrigerator for another drink or to top off later.
Top with sparkling water
Carefully pour chilled sparkling water into each glass, dividing the 400 ml between the two glasses (approximately 200 ml each). Pour slowly over the back of a spoon or down the side of the glass to preserve carbonation and create a layered look.
Garnish and finish
Gently stir each drink once with a cocktail spoon 2–3 times to combine the strawberry base with the sparkling water. Garnish each glass with 3 additional strawberry slices arranged on the rim and a sprig of mint. Squeeze the optional lime wedge lightly over the top if you like a brighter acidity, then drop it into the glass.
Serve
Serve immediately while sparkling water is fizzy. For best presentation, provide a straw and a small stirrer so the drinker can remix as the soda settles.
