Peach Purée & Infusion

Make Peach Purée

Place the diced ripe peaches, 1 tablespoon granulated sugar, and 1 tablespoon hot water in a blender. Blend until completely smooth, about 20–30 seconds. Taste and adjust sweetness by adding up to 1 more teaspoon sugar if needed. Strain the purée through a fine mesh sieve into a bowl to remove fibrous bits for a silky texture, pressing with a spatula; yields about 3/4–1 cup purée.

Optional Quick Infusion (for stronger peach flavor)

If you want a more pronounced peach note in the tequila: combine 2 ounces of the blanco tequila with 1/4 cup of the peach purée in a jar. Let sit at room temperature for 20–30 minutes, then strain back into the bottle or into the cocktail mix. Use the infused tequila in the recipe in place of the full blanco amount.

Combine Cocktail Ingredients

In a cocktail shaker, add 2 cups of ice, 6 oz blanco tequila, 2 oz peach schnapps, 1 oz triple sec, 2 oz fresh lime juice, 0.75 oz simple syrup, and 3/4 cup (approximately) of the strained peach purée. If you made the optional infused tequila, substitute it for an equal portion of the blanco tequila.

Shake

Seal the shaker and shake vigorously for 12–15 seconds until the outside of the shaker becomes frosty and the mixture is well chilled and slightly integrated with the purée.

Prepare Glasses

Run a lime wedge around the rims of two 10–12 oz margarita or rocks glasses. Dip the rims into coarse salt or sugar (2 tsp total) spread on a small plate to coat. Fill the glasses with fresh ice (about 1 cup ice per glass).

Strain & Serve

Double-strain the shaken mixture into the prepared glasses to remove remaining pulp and ice shards. Each glass should receive roughly 6–7 oz of cocktail. Garnish each glass with a thin peach slice and a lime wedge on the rim.

Finish & Serving

Taste one drink and adjust if needed: add a splash (0.25–0.5 oz) simple syrup for more sweetness, or 0.25 oz fresh lime juice for more brightness. Serve immediately.

If preparing a pitcher (multiply ingredients by number of servings): keep shaken or stirred mixture chilled and stir before serving; add fresh peach slices to the pitcher for visual appeal.
