Mango Base
Make the mango puree (if not using pre-made)
Peel and chop 2 medium ripe mangoes. Place the mango flesh in a blender and puree until completely smooth (about 30–45 seconds). If the puree is very thick, add 1–2 tablespoons of cold water to help blend. Measure out 1.5 cups of the puree for the recipe and reserve any extra for another use or additional servings.
If you prefer a slightly textured drink, reserve 1/4 cup of the diced mango to stir in later as garnish/texture.
Citrus & Sweeteners
In a small bowl or measuring cup, combine the fresh lime juice and simple syrup. Taste and adjust: add more simple syrup if the mango is tart, or more lime if you want brighter acidity. Aim for a balanced sweet-tart profile that complements the mango.
Mixing & Assembling
Fill two serving glasses (or one large pitcher) with ice, dividing the ice between them (approximately 1/2 cup of ice per glass).
Divide the mango puree evenly between the glasses (about 3/4 cup per glass).
Add half of the lime-simple syrup mixture into each glass (about 1 tablespoon per glass). Stir gently to combine the puree, lime and simple syrup with the ice until slightly chilled and integrated. The goal is a smooth, bright mango base.
Top each glass with 1/2 cup of cold sparkling water. Pour slowly to keep some effervescence. Stir once gently to incorporate; avoid vigorous stirring so bubbles remain.
Optional Color Layer (Sunset Effect)
To create a sunset gradient, slowly pour 1/2 tablespoon to 1 tablespoon of grenadine down the inside edge of each glass after the drink is assembled. The grenadine, being heavier, will sink and create a red-to-orange gradient that resembles a sunset. Do not stir after adding grenadine.
Garnish & Serve
Garnish each glass with the reserved diced mango (about 2 tablespoons), a lime wheel or wedge on the rim, and a mint sprig. For a refined presentation, lightly slap the mint between your palms to release aroma before placing it on the drink.
Serve immediately while sparkling water is fizzy. Stir with a straw when drinking to blend the grenadine if you prefer an evenly flavored beverage.
