    Reheat Duck Confit

    Preheat oven to 375°F (190°C). Place the duck confit legs skin-side up on a rimmed baking sheet or ovenproof skillet. Score the skin lightly in a crosshatch to help render fat. Roast for 15–20 minutes until the skin is crisp and meat is heated through. Remove from oven and keep warm, loosely tented with foil.

    Cook Bacon Lardons

    While the duck reheats, place the bacon lardons in a cold skillet and turn heat to medium. Render fat slowly, stirring occasionally, until the lardons are crisp at the edges, about 8–10 minutes. Using a slotted spoon, transfer lardons to a paper-towel-lined plate and reserve the rendered fat in the pan (about 2 tablespoons). Keep warm over very low heat.

    Poach Eggs

    Bring a wide shallow saucepan of water to a gentle simmer (not a rolling boil). Add a splash (about 1 tsp) of vinegar or a few drops of lemon juice to help the eggs coagulate. Crack each egg into a small cup then gently slip into simmering water. Poach for 3–3.5 minutes for a runny yolk or 4 minutes for slightly firmer, then remove with a slotted spoon and drain on paper towel. Poach just before plating so eggs are warm.

    Prepare Potatoes

    While duck starts, parboil the diced potatoes in salted water for 6–8 minutes until just tender but not falling apart. Drain well and spread on a tray to steam-dry for 5 minutes. In a skillet over medium-high heat, add 1 tablespoon of reserved bacon fat (or 1 tbs olive oil if needed). Add potatoes in a single layer and sauté, turning occasionally, until golden and crispy on all sides, about 8–10 minutes total. Season with a pinch of fine sea salt and cracked pepper. Keep warm.

    Blanch Haricots Verts

    Bring a pot of heavily salted water to a rolling boil. Add haricots verts and blanch for 2 minutes until bright green and tender-crisp. Immediately transfer to an ice bath to stop cooking, then drain and pat dry. Right before plating, toss briefly in the warm reserved bacon fat for 30–60 seconds to heat through and pick up flavor; season with a pinch of salt.

    Prep Tomatoes & Frisée

    Quarter the tomatoes and gently season with a light pinch of salt and pepper to taste. Toss frisée in a large bowl to break up any large clumps and remove any tough stems; set aside until assembly.

Warm Bacon Lardon Vinaigrette

    Make the vinaigrette while bacon renders and potatoes roast. In a small bowl whisk together sherry vinegar, Dijon mustard, and honey (if using). Slowly whisk in olive oil to emulsify. Add 1–2 tablespoons of the reserved warm bacon fat to the vinaigrette so the dressing is warm and glossy (the fat will seize slightly but whisking will incorporate). Season with salt and freshly ground black pepper to taste. Fold in the crisp bacon lardons (reserve a few for garnish). Keep warm or at room temperature.

Assembly & Finishing

    Plate the salad on two warmed plates: divide frisée between plates, toss lightly with a couple tablespoons of the warm bacon-lardon vinaigrette so the greens are coated but not soggy.

    Arrange a small mound of haricots verts and tomato wedges beside the frisée. Place the crispy potato dice in a neat cluster. Top each plate with one reheated duck confit leg, skin-side up, leaning on the salad components.

    Gently place a warm poached egg on top of the frisée or on the duck if preferred. Spoon any remaining warm vinaigrette and a few reserved lardons over the whole plate. Finish with a sprinkle of fresh chives and a grind of cracked black pepper. Serve immediately so the egg can be cut and yolk acts as a light sauce.
