Shake
Fill a cocktail shaker with ice. Add 2 oz gin, 0.5 oz Cherry Heering, 0.25 oz Benedictine, 0.75 oz fresh lime juice, 0.25 oz simple syrup and 2 dashes Angostura bitters. Cap the shaker and shake vigorously for 10–15 seconds until well chilled (shaker should frost).

Strain & Top
Fill a highball or Collins glass with fresh ice (large cubes or crushed per preference). Double-strain the shaker contents into the glass to remove small ice shards and any lime pulp. Top with about 2 oz chilled soda water, gently stir once with a bar spoon to combine without flattening the fizz.
Garnish & Serve

Thread the maraschino or Luxardo cherry (1) onto a pick and place on the rim or inside the glass. Add a lime wheel or wedge to the rim. Optionally run the lime wedge around the glass lip before placing it. Serve immediately with a straw.
