Oysters

Clean oysters
Rinse the oyster shells under cold running water, scrubbing away any dirt, barnacles, or debris with a stiff brush. Discard any oysters with cracked or open shells that do not close when tapped.

Prepare serving bed
Fill a large serving platter or tray with an even layer of crushed ice (about 6–8 cups). This stabilizes the shells and keeps oysters cold while serving.

Shuck oysters
Place a thick kitchen towel over one hand and hold an oyster flat-side up in the towel with the hinge facing you. Using an oyster knife, insert the tip at the hinge and twist gently until the shell pops. Slide the knife along the top shell to cut the muscle and remove the top shell. Hold the oyster level and slide the knife under the oyster to detach it from the bottom shell, taking care to retain as much liquor (briny juice) as possible. Transfer each oyster on the half shell to the bed of crushed ice with the deeper cup down so the oyster liquor pools in the shell. Repeat for all oysters. Place discarded shells into the discard bowl.

Keep cold
Once shucked, keep oysters on the ice and return them to the refrigerator if not serving immediately. Serve within 2 hours of shucking for best quality and safety.
Classic mignonette

Combine red wine vinegar (1/2 cup) and finely minced shallots (2 tbs) in a small bowl.

Add cracked black pepper (1 tsp), fine sea salt (1/2 tsp), and sugar (1/2 tsp, optional). Stir until the sugar and salt dissolve. Taste and adjust — add a pinch more sugar if the vinegar is very sharp, or a little more pepper for bite.

Cover and refrigerate the mignonette for at least 30 minutes to allow the shallots to mellow and flavors to meld. The mignonette can be made up to 24 hours ahead and kept chilled.

Just before serving, stir the mignonette and, if desired, mix in the minced chives (1 tbs) for a fresh herbal note.
Assembly & serving

Spoon about 1/2 to 3/4 teaspoon of mignonette onto each oyster (or serve mignonette in a small bowl for guests to spoon), being careful not to drown the oyster or wash away the liquor completely.

Garnish lightly with a few grains of cracked black pepper or a sprinkle of minced chives if using. Provide lemon wedges and hot sauce on the side, along with cocktail forks or toothpicks for ease of eating.

Advise guests to tip the shell to their mouth and slurp the oyster, liquor, and mignonette together, then chew once or twice to enjoy the texture and flavors.

Buy oysters from a reputable source and keep them well chilled from purchase until serving. Do not serve oysters that smell overly fishy or rotten. Shuck close to service time and consume within 2 hours at room temperature or within 24 hours if kept cold on ice.
