Chicken livers & seasoning

    prepare livers

    Rinse chicken livers under cold water and pat dry thoroughly with paper towels. Trim any connective tissue or greenish bile spots and cut large lobes in half so pieces are roughly uniform (about 1-inch pieces).

    sauté aromatics

    Heat a large skillet over medium heat. Add 1 tablespoon butter and 1 tablespoon olive oil. When butter foams, add the finely chopped shallot and sauté 2–3 minutes until softened and translucent but not browned. Add the minced garlic and cook 30 seconds until fragrant.

    cook livers

    Increase heat to medium-high. Add the prepared chicken livers in a single layer, searing without overcrowding (work in two batches if necessary). Sear 1.5–2 minutes per side until the exterior is browned but the center still slightly pink — do not overcook or they become dry. Transfer cooked livers to a plate.

    deglaze & finish

    Reduce heat to medium. Add the brandy to the hot pan to deglaze, scraping up browned bits; allow alcohol to burn off for about 30 seconds. Return all livers to the pan, add remaining 1 tablespoon butter, heavy cream, chopped thyme, salt and black pepper. Stir for 30–60 seconds to combine and warm through, then remove from heat.

    blend to pâté

    Transfer the cooked liver mixture (including pan juices) to a food processor or blender. Pulse until smooth — start coarse then blend to a silky texture, about 30–45 seconds. If mixture is too thick, add 1–2 teaspoons warm water or extra cream to reach a spreadable consistency. Taste and adjust seasoning.

Toasts

    Preheat oven to 375°F (190°C). Slice the baguette on the diagonal into 12–16 slices about 1/3-inch thick. Brush both sides lightly with olive oil. Arrange slices in a single layer on a baking sheet.

    Bake for 8–10 minutes, flipping once, until edges are golden and crisp. For extra richness, rub the warm toasts with the optional 1 tablespoon butter immediately after baking.

Fruit compote

    In a small saucepan combine the chopped fruit, granulated sugar, lemon juice, water, balsamic vinegar and orange zest if using. Bring to a gentle simmer over medium-low heat.

    Simmer, stirring occasionally, until fruit softens and mixture thickens slightly, about 6–8 minutes for berries or 8–12 minutes for firmer stone fruit. Mash a few pieces with the back of a spoon for a spoonable compote texture. Remove from heat and let cool to room temperature; compote will thicken as it cools.

Salad garnish & assembly

    Whisk together 1 tablespoon extra-virgin olive oil and 1 teaspoon sherry or red wine vinegar with a pinch of flaky sea salt and 1/4 teaspoon black pepper. Toss the baby greens and microgreens lightly with this dressing just before plating so they remain crisp.

    Spread about 1–2 tablespoons of the warm (or room-temperature) chicken liver pâté onto each toast. Top each with a generous teaspoon of fruit compote. Arrange dressed baby greens beside or on top of each toast, or place a small nest of greens atop each toast for a composed hors d'oeuvre.

    Finish with a small drizzle of extra-virgin olive oil, a few flakes of sea salt, and an optional tiny sprig of thyme or microgreens for garnish. Serve immediately while toasts are crisp and pâté is spreadable.
