    Prepare peaches

    If not already peeled, blanch 2 medium peaches in boiling water for 20–30 seconds then transfer to an ice bath. Peel skins, pit and chop to yield about 1 1/2 cups of chopped fruit.

    Cook-down (optional for smoother flavor)

    Place the chopped peaches, 2 tsp sugar, 1 tsp lemon juice and 2 tbsp cold water in a small saucepan over medium-low heat. Cook, stirring occasionally, until peaches soften and release juices, 4–6 minutes. Remove from heat and let cool 10 minutes. (This step mellows raw sharpness and integrates sugar; skip if you prefer a very fresh, raw puree.)

    Puree

    Transfer the peaches (cooked or raw) to a blender or food processor. Puree until completely smooth, about 20–30 seconds. If mixture seems very thick, add 1–2 tsp water to reach a slightly pourable but thick syrup consistency.

    Strain (optional)

    For a silkier Bellini, pass the puree through a fine-mesh sieve into a bowl, pressing with the back of a spoon to extract about 1 cup of smooth peach purée. Discard solids.

Sparkling Wine & Finish

    Chill glassware

    Chill champagne flutes in the refrigerator for at least 15 minutes beforehand so the drink stays cold longer.

    Combine and serve

    Spoon 2 tablespoons of the peach purée into each chilled flute (adjust to taste). Tilt the flute and slowly pour in 3/4 cup (6 fl oz) cold Moscato per glass, pouring gently to preserve bubbles. Stir once very gently with a bar spoon to combine, taking care not to flatten the wine.

    Garnish and present

    Float a thin peach slice on the surface or clip it to the rim. Add a small mint leaf if desired. Serve immediately.

    Batch instructions (if making 6 servings)

    For a 6-glass batch, prepare about 1 cup of strained peach purée and chill. Place ~2 tbsp purée in each of six flutes and top each with 3/4 cup chilled Moscato, or combine purée and Moscato gently in a pitcher right before serving and pour into glasses.
