    Choose base

    Decide which snack base you'll use (chicken, tofu, or cauliflower). Pat your chosen base dry with paper towels. If using chicken, trim to even 1" strips. If using tofu, press for 15–30 minutes and cut into sticks. If using cauliflower, cut into even bite-size florets.

    Set up station

    Line a baking sheet with parchment or a wire rack over a sheet pan for finished pieces. Place flour in a shallow bowl, whisk egg and milk together in a second shallow bowl, and crush potato chips with panko in a third bowl (place chips in a resealable bag and crush with a rolling pin or pulse briefly in a food processor).

Make Paprika Coating

    In the bowl with crushed potato chips and panko, add smoked paprika, sweet paprika, garlic powder, onion powder, sea salt, and black pepper. Mix thoroughly so the seasoning is evenly distributed and the crumbs are uniformly orange and aromatic.

    Add the all-purpose flour to its bowl and whisk briefly to remove lumps. This will help the coating adhere and create a drier first layer for crunchy texture.

Coat the Pieces

    Working in batches to avoid overcrowding, dredge each piece first in the seasoned flour, shaking off excess. This creates a dry surface for the egg wash to cling to.

    Dip the floured piece into the egg-and-milk mixture, letting excess drip back into the bowl.

    Press the piece firmly into the paprika-potato-chip-panko mixture, turning to coat all sides. For extra crunch, repeat the egg wash and crumb step for a double coating.

    Place coated pieces on the prepared rack or parchment-lined baking sheet. Allow them to rest 5–10 minutes — this helps the coating adhere and reduces loss during frying.

Cook

    Heat a large skillet over medium heat and add neutral oil (about 2–3 tablespoons). When the oil shimmers but is not smoking, add the coated pieces in a single layer without crowding. Cook for 2–4 minutes per side (chicken: 3–4 min/side until internal temp 74°C/165°F; tofu: 2–3 min/side until golden; cauliflower: 3–4 min/side until tender and golden). Adjust heat as needed so the coating browns but does not burn. Transfer cooked pieces to a wire rack or paper towel-lined plate.

    Bake (oven option, for less oil)

    Preheat oven to 220°C (425°F). Place coated pieces on a lightly oiled baking sheet or wire rack and spray or brush lightly with oil. Bake for 12–18 minutes, flipping halfway, until golden and cooked through (chicken to 74°C/165°F).

Finish & Serve

    While still hot, sprinkle a light pinch of additional smoked paprika or sea salt over the pieces to brighten the flavor. Squeeze the optional lemon half over the pieces for a touch of acidity and scatter chopped parsley if using.
