Marinate the Chicken

In a large bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, ground cumin, paprika, salt, and black pepper. Cut chicken breast into 1-inch cubes and add to the marinade. Toss to coat, cover, and refrigerate for at least 30 minutes or up to 2 hours.

Prepare the Skewers

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread marinated chicken, bell peppers, and onion onto skewers alternating between the ingredients.

Cook the Rice

In a saucepan, combine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until rice is tender and water is absorbed. Fluff with a fork.

Grill the Kabobs

Preheat the grill to medium-high heat. Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Serve

Remove the kabobs from the grill and let them rest for a few minutes. Serve the chicken kabobs with a side of rice.
