Brewing Instructions

Mashing

Heat 5 liters of water to 160°F (71°C) and add Pilsner malt, flaked wheat, and Carafoam malt. Maintain the temperature for 60 minutes.

Sparging

After mashing, sparge the grains with hot water to extract sugars, collecting 6 liters of wort.

Boiling

Bring the wort to a boil and add Citra hops at the start of the 60-minute boil. Add Mosaic hops with 15 minutes remaining and Galaxy hops with 5 minutes remaining.

Cooling

Cool the wort quickly using a wort chiller or ice bath to around 70°F (21°C).

Fermentation

Transfer the cooled wort to a fermentation vessel, pitch the yeast, and add the tropical fruit puree. Seal and ferment for 1-2 weeks at 68-72°F (20-22°C).

Bottling

After fermentation, dissolve priming sugar in a small amount of boiling water, cool it, and add it to the beer before bottling. Bottle and let it carbonate for another 1-2 weeks.
