Make filling base
In a medium bowl, combine the softened cream cheese, shredded cheddar, minced garlic, chopped green onions, and chopped cilantro (if using). Mix until smooth and evenly combined.

Add crab and season
Gently fold the flaked crab meat into the cheese mixture until evenly distributed. Season with salt and black pepper and taste; adjust salt as needed.

Stuff jalapeños
Using a small spoon or piping bag, fill each jalapeño half with the crab–cream cheese mixture, pressing gently so the filling is level with the pepper edges. You should have 10 stuffed halves (5 whole peppers).

Oven method (baked)
Preheat the oven to 400°F (200°C). Place the stuffed jalapeños on a parchment-lined baking sheet. Lightly brush the tops with olive oil (about 2 tbsp distributed). Bake for 12–15 minutes until the tops are golden and filling is bubbling. Remove and let rest 2 minutes before serving.

Breaded & fried method (crispy)
Set up a dredging station: place the flour in one shallow dish, the beaten egg in a second dish, and the breadcrumbs in a third. Lightly dust each stuffed jalapeño with flour, dip into the beaten egg, then coat with breadcrumbs, pressing gently to adhere. In a deep skillet or small pot, heat vegetable oil to 350°F (175°C) — about 1/2" (1.3 cm) deep. Fry the breaded jalapeños in batches for 2–3 minutes per side until golden brown and heated through. Transfer to a paper-towel-lined plate to drain. If desired, finish in a 350°F (175°C) oven for 3–4 minutes to ensure the filling is hot.

Arrange 5 pieces on a serving plate (each whole jalapeño counts as one piece if served halved, otherwise plate 5 halves per order as menu portion). Serve immediately with 1/4 cup ranch dressing for dipping and lemon or lime wedges on the side. Note: If you made extra filling, refrigerate and use within 2 days.
