Beef Patties

    Form patties

    Divide the ground beef into 4 equal portions (about 4 oz / 115 g each). Gently shape each portion into a round patty about 3/4 inch (2 cm) thick. Avoid overworking the meat to keep patties tender. Press a shallow dimple in the center of each patty with your thumb to prevent bulging during cooking.

    Season both sides of each patty with kosher salt and freshly ground black pepper. If using Worcestershire sauce, lightly mix it into the meat before forming patties (do not overmix).

    Heat a large skillet or cast-iron pan over medium-high heat until very hot, about 2–3 minutes. Add 1 tsp neutral oil and swirl to coat. Place patties into the pan leaving space between them. Cook without moving for 3–4 minutes until a deep brown crust forms.

    Flip the patties and cook 2–3 minutes more for medium doneness. In the last 30–60 seconds of cooking, place a slice of cheddar on each patty and cover the pan or tent with foil to melt the cheese. Internal temperature should reach about 160°F (71°C) for well-done per USDA, adjust time for preferred doneness.

    While patties cook, prepare toppings. Slice the tomato into 1/4-inch thick rounds. Peel and slice the red onion into thin rings. Separate and rinse lettuce leaves, then pat dry.

    Toast the buns: spread about 1/2 teaspoon of softened butter on the cut side of each bun top and bottom. In a separate skillet or the oven, toast buttered cut sides over medium heat or under broiler until golden and crisp, about 1–2 minutes per side. Watch closely to avoid burning.

Sauce

    Make the sauce by combining mayonnaise, ketchup, yellow mustard, sweet pickle relish, hot sauce (if using), and black pepper in a small bowl. Stir until smooth and taste-adjust: add more relish for sweetness or hot sauce for heat.

    Spread about 1 tablespoon of sauce on the bottom half of each toasted bun and a thin layer on the top bun if desired.

Assemble & Serve

    Place a lettuce leaf on the sauced bottom bun, then a slice of tomato, a few onion rings, and 2 pickle slices (adjust to preference).

    Set the hot cheeseburger patty on top of the tomato. Add any additional pickles or onions, then place the top bun. Repeat for remaining burgers.
