Gumbo Base (Roux + Holy Trinity + Seasoning)

Make a dark roux
In a heavy-bottomed Dutch oven or large pot, heat 0.5 cups vegetable oil over medium-low heat. Gradually whisk in 0.5 cups flour. Stir constantly with a flat-edged spatula or wooden spoon, keeping heat at medium-low. The mixture will bubble and darken; continue stirring and cooking until it reaches the color of milk chocolate to dark peanut butter (20–30 minutes). Watch carefully to avoid burning; reduce heat if it smokes.

When roux is at desired color, carefully add 1 cup diced onion, 1/2 cup diced green bell pepper, and 1/2 cup diced celery to the roux. Stir and cook 5–7 minutes until vegetables soften and pick up color, scraping any browned bits from the bottom. Add 2 minced garlic cloves and cook 30–60 seconds until fragrant.

Slowly stir in 6 cups chicken stock a half-cup at a time, whisking to incorporate and deglaze the pot. Bring mixture to a gentle simmer.

Add 1 tbs tomato paste (optional), 2 bay leaves, 0.33 tsp thyme (or 1 small sprig fresh), 0.5 tsp file powder (if using, do not add until finishing if using), 0.25 tsp cayenne, 1 tsp paprika, 1.5 tsp salt, and 0.5 tsp black pepper. Stir and simmer gently for 15 minutes to marry flavors.
Protein Options (choose one or combine)

If using chicken: Pat 1 lb chicken thigh pieces dry, season lightly with 0.5 tsp salt and 0.25 tsp pepper. In a separate skillet or the Dutch oven if there's room, brown chicken pieces over medium-high heat in a tablespoon of oil for 3–4 minutes per side to develop color (they do not need to cook through). Transfer browned chicken into the simmering gumbo and simmer for 20–25 minutes until tender.

If using andouille sausage: Add 0.5 lb sliced sausage to the pot along with the chicken or to the gumbo base and simmer 10–15 minutes to release flavor. Alternatively, brown sausage slices first for deeper flavor.

If using shrimp and/or catfish: If using shrimp or catfish (1 lb each if combining), add them toward the end — shrimp cook quickly. For catfish, add 6–8 minutes before finishing; for shrimp, add 3–4 minutes before finishing. Simmer gently until shrimp are pink and catfish is opaque and flakes easily. Do not overcook seafood.
Vegetables & Add-ins

If using okra: Add 1 cup sliced okra to the gumbo when the proteins have about 10–12 minutes left to simmer (so that it thickens the gumbo and retains some texture). If using frozen okra, add directly from frozen and simmer a few minutes longer.

Taste and adjust seasoning: remove bay leaves. Check for salt, pepper, and cayenne; add more if desired. If you did not add file powder earlier, sprinkle 0.5 tsp file powder into individual bowls right before serving to slightly thicken and add flavor (do not boil after adding file).

Stir in 0.5 cup sliced green onions and 2 tbs chopped parsley just before serving to preserve bright flavor.
Rice & Serving

While gumbo simmers, prepare rice: In a medium saucepan, bring 3.5 cups water and 0.5 tsp salt to a boil. Add 2 cups rinsed long-grain white rice, stir once, reduce heat to low, cover tightly and cook 18 minutes. Remove from heat and let rest, covered, 5–10 minutes. Fluff with fork.

To serve: Spoon steamed rice into shallow bowls (about 1/2 to 3/4 cup rice per serving). Ladle gumbo over rice (about 1 to 1 1/2 cups gumbo per serving). Garnish with extra sliced green onions and parsley, and pass crackers on the side. Offer hot sauce at the table if desired.
