Battered Mushrooms

    Prepare mushrooms

    Wipe mushrooms clean with a damp paper towel to remove dirt. Trim stems if needed so all mushrooms are approximately similar size (leave whole). Pat dry thoroughly; excess moisture prevents batter from adhering.

    Make wet batter

    In a medium bowl whisk together the egg and cold sparkling water until blended. Add 3 tablespoons flour, 2 tablespoons cornstarch, baking powder, salt, black pepper, garlic powder, and paprika. Whisk until just combined — small lumps are fine. The batter should be thick enough to coat mushrooms but still pourable; if too thick add 1 teaspoon cold water, if too thin add 1 teaspoon flour.

    Prepare panko

    Spread 1 cup panko breadcrumbs on a plate or shallow bowl. This will create a crisp outer layer once the battered mushroom is dipped into the panko.

    Heat oil

    Pour vegetable oil into a heavy-bottomed pot or deep skillet to a depth of about 1.5–2 inches (enough to fully submerge mushrooms). Heat over medium-high until oil reaches 350°F (175°C). If you don’t have a thermometer, test by dropping a small piece of batter — it should sizzle and float up steadily.

    Dredge mushrooms

    Place the 1/2 cup flour for dredging in a shallow bowl. Working in small batches, lightly toss a few mushrooms in flour (shake off excess), then dip into the batter to coat thoroughly, letting excess batter drip back into the bowl. Immediately press the battered mushroom into the panko so breadcrumbs adhere evenly, pressing gently to create a uniform coating. Place coated mushrooms on a wire rack or tray while you work.

    Fry mushrooms

    When oil has reached 350°F, carefully lower a few coated mushrooms into the hot oil without overcrowding (avoid more than 6–8 at a time depending on pot size). Fry, turning as needed, until golden brown and crisp, about 2.5–4 minutes per batch depending on mushroom size. Use a slotted spoon to transfer mushrooms to a paper towel–lined tray or wire rack to drain. Immediately season lightly with a pinch of salt if desired. Repeat with remaining mushrooms, allowing oil to return to temperature between batches.

    Finish

    If you want extra crispness, place fried mushrooms on a sheet pan and keep in a 200°F (95°C) oven for up to 10 minutes while you finish frying the rest so all are warm and crisp when served.

Serve

    Transfer fried mushrooms to a serving platter. Serve hot with 1/2 cup ranch dressing for dipping. Garnish with finely chopped parsley if using. Recommended: provide lemon wedges for optional brightening squeeze.
