    Prepare and marinate

    Pat the flat iron steak dry with paper towels. In a small bowl combine 2 tbs olive oil, 1 tbs soy sauce, 1 tsp Worcestershire sauce, finely minced garlic (3 cloves), 1 tsp freshly ground black pepper and 1 tsp kosher salt. Rub the mixture all over the steak, coating both sides. Place the steak in a shallow dish or resealable plastic bag and refrigerate to marinate for 30 minutes to 2 hours. Remove from refrigerator 20 minutes before cooking to come toward room temperature.

    Preheat pan or grill

    If using a cast-iron skillet: place the skillet over medium-high heat and let it heat for 5 minutes until very hot. If using a grill: preheat to high (about 450–500°F / 230–260°C). Lightly oil the cooking surface or brush a little olive oil on the steak if needed.

    Sear the steak

    Place the steak in the hot skillet or on the grill. Sear without moving for 3–4 minutes to form a deep brown crust. Flip and cook the other side for 3–4 minutes for medium-rare (internal temperature about 130–135°F / 54–57°C). For medium, cook 4–5 minutes per side (135–145°F / 57–63°C). Adjust time for thickness; a 1-inch steak follows times above.

Finishing & Serving

    Rest and baste

    During the last 30–60 seconds of cooking, add 1 tbs unsalted butter to the skillet and tilt the pan to baste the steak with melted butter. If grilling, transfer steak to a clean pan to melt the butter and spoon over the top.

    Rest

    Remove the steak to a cutting board and loosely tent with foil. Let rest 7–10 minutes to allow juices to redistribute.

    Slice and serve

    Slice the steak thinly against the grain into 1/4-inch slices. Sprinkle with 1 tbs chopped fresh parsley and squeeze juice from 1/2 lemon over the sliced steak. Serve immediately.
