Prepare crab claws
Rinse crab claws under cold water. Using kitchen shears or a crab cracker, lightly crack the shells to expose meat but keep claws intact to release flavor in the stock.

Sweat aromatics
In a large, heavy saucepan or Dutch oven over medium heat, melt 2 tbs unsalted butter. Add finely chopped shallot, smashed garlic, chopped carrot, chopped celery and sliced leek. Cook, stirring occasionally, until softened and translucent, about 5–7 minutes; do not brown.

Toast shells and build flavor
Add the cracked crab claws to the pot and stir for 2–3 minutes to combine and warm through. Stir in 1 tbs tomato paste and cook 1 minute to take off the raw edge. Pour in 1 cup dry white wine and bring to a simmer, scraping any browned bits from the bottom with a wooden spoon; reduce the wine by half, about 3–4 minutes.

Simmer stock
Add 6 cups water or low-sodium seafood stock, bay leaf, thyme sprig, and black peppercorns. Bring to a gentle simmer, reduce heat to low, and simmer uncovered for 25–30 minutes to extract the crab flavor into the liquid.

Strain and reserve
Remove from heat and strain the stock through a fine-mesh sieve into a clean pot or bowl, pressing on solids to extract liquid. Discard solids (or pick any remaining meat from shells for garnish). Taste the strained stock and season with 1.5 tsp kosher salt, adjusting after the soup is finished.

Reduce and enrich
Return the strained crab stock to the stove over medium-low heat. Add 1/2 cup heavy cream and 1 tbs unsalted butter. Warm gently, stirring until butter melts and the mixture is just under a simmer. Do not boil vigorously once cream is added to prevent separation.

Season and balance
Stir in 1 tbs fresh lemon juice, 1/4 tsp smoked paprika and 1/8 tsp cayenne pepper. Taste and adjust salt and pepper as needed. The lemon brightens the soup; add additional 1/2 tbs if it needs more lift.

Final tasting
Taste the soup and adjust seasoning: more salt, pepper, lemon, or a pinch more cayenne to desired heat.
Serving & Optional Garnish

Ladle the hot crab claw soup into warmed bowls. Top each bowl with extra picked crab meat (optional), a sprinkle of chopped parsley and chives, and an optional dusting of smoked paprika for color.
