Prepare the Pork Belly

Preheat the oven to 180°C (350°F). Season the pork belly with salt and pepper, then place it in a roasting pan. Roast for about 1.5 hours until crispy. Allow it to cool, then chop into small pieces.

Cook the Red Rice

Rinse the red rice under cold water. In a pot, combine 1 cup of red rice with 2 cups of water. Bring to a boil, then reduce the heat and simmer for about 30-40 minutes until the rice is tender. Fluff with a fork and set aside.

In a crispy flour shell, layer the chopped pork belly, red rice, charra beans, pickled jalapeños, crispy carrots, red pickled cabbage, and drizzle with aji amarillo sauce.
